The Designer Behind the Cake

It’s a pleasure to introduce you to Holly Miller, an award-winning cake designer whose creations are as much a feast for the eyes as they are for the palate. Twice crowned National Wedding Cake Designer of the Year, Holly has a rare talent for turning flavour, colour, and texture into elegant, one-of-a-kind cakes that feel entirely personal to each couple.

With a love for bold, imaginative design and a meticulous attention to detail, Holly brings a touch of artistry and indulgence to every celebration—making the journey to your perfect wedding cake as memorable as the cake itself.

Tell us a bit about yourself and your journey as a cake designer

Food has always been a huge part of my life. Some of my fondest memories are of sitting around the table with my Italian Nan and our big Italian family, having lively (and very passionate!) discussions over incredible food.

As a child, my mum would create the most amazing, highly decorated birthday cakes for us. They were always beautiful and unique, and I think that was my first glimpse of how magical cakes can be. I suppose it was inevitable that this love for baking would be passed down to me. I started making cakes for my own children’s birthdays, which very quickly reignited that creative spark.

The first wedding cake I ever made was a semi-naked design for a lovely woman who worked at our local garage. We were chatting one day, and she mentioned she was getting married. I said I made cakes, she asked if I would create hers and that was really where it all began.

Fast forward to now, and we are recognised as one of the leading wedding cake designers in the UK, working with couples nationally and internationally. We have been incredibly proud to win National Wedding Cake Designer of the Year two years running for 2024 and 2025, and I am now honoured to sit as a judge for both The Wedding Industry Awards and the UK Wedding & Honeymoon Awards.

What advice would you give to couples before they get in touch about planning their cake?

Be open minded about your cake. Inspiration images are great, and it is helpful to share what you are drawn to, but the best results come when you trust your designer to really get to know you as a couple and create something that is genuinely yours. Unique to you!

Your cake doesn’t need to follow a trend or replicate something you have seen before. It should feel personal, considered, and reflective of you both. That will always feel far more special than choosing something that has already been done.

Do you have any winning combinations when it comes to flavours and designs?

I am always drawn to things that feel a little different. Bold, interesting, and not afraid to stand out. Flavour wise, a lot of my inspiration comes from my love of food. We are a real foodie family, from good burgers to fine dining, and I love playing with flavours for my cakes.

Some of our most popular flavours at the moment are miso caramel, lemon with elderflower and blackcurrant, and orange blossom, almond and thyme.

Design wise, I don’t tend to follow trends. I take inspiration from the beautiful and interesting elements around me. Flowers, textures, architecture, patterns, anything I find visually appealing and translate those into beautiful edible art.

Is there a particular cake moment at a wedding that stands out as a favourite or most memorable for you?

Last year I created a cake for a really lovely couple. The bride’s mum initially got in touch because I had made a large joint birthday cake for her and her son a few years before. Over the months of planning, I got to know the bride incredibly well.

On the wedding day, she asked if I would pop over to the getting ready room to say hello, and then she asked if I would stay so she could see her cake for the first time with me there. Seeing her reaction was honestly so moving and humbling. It is such a privilege to create something that becomes part of such a personal moment. I found it incredibly emotional.

If you weren’t designing cakes, what would you be doing instead?

That is a tough one! If I wasn’t making cakes, I would definitely still be doing something connected to food. It is such a huge part of who I am and how we live as a family. We love cooking at home, experimenting with new flavours and recipes, and my husband is an amazing cook.

We also love to travel, and so many of our family trips revolve around discovering incredible places to eat and experiencing different food cultures. If I wasn’t a cake designer, I think I would love to be a travel food writer, combining my love of food, storytelling and travel.

If you could share one top tip for couples planning their wedding at Huntsham Court, what would it be?

Really lean into the grandeur of the space. Huntsham Court is such an impressive setting, and it suits weddings that are thoughtfully styled and full of detail from start to finish. Do not be afraid to be a little bolder with your design choices… the venue can absolutely carry it.

Do you have a signature style or element that appears in most of your cakes?

I am not sure I would say I have a single “signature style” as such. We are not a cookie cutter; one size fits all cake studio. Every cake is designed around the couple, their story, their aesthetic and the feeling they want to create for their big day.

That said, if I had to pinpoint a few recurring elements, my designs do tend to be on the larger side. I love playing with scale, adding depth through different tier heights, and bringing interest through texture. Many of my designs are also quite colourful, and I absolutely adore spending hours creating intricate, handcrafted sugar flowers.

Are there any cake trends you’re loving right now or advising couples to explore?

If I am honest, I try not to focus too much on trends. I design cakes inspired by life, love and my couples, creating something that feels personal rather than ‘of the moment’. I know my strengths, what I love, what I don’t love and what I am good at, and I put my energy into that rather than worrying about what everyone else is doing.

What are your favourite things about Huntsham Court as a wedding venue?

Huntsham Court is such a grand, traditional country house venue. The grounds are beautiful, the house itself is stunning, and the ornate rooms create an incredible backdrop for bold, well styled weddings.

The weddings I love creating cakes for are the ones where couples have really thought about the look of their day and how all the details come together. Huntsham Court suits that kind of wedding perfectly, which makes it a great fit for the way I design.
