Local produce amazingly prepared

Huntsham Court Supper Clubs are all about a celebration of fine food, good company and culture. Josh, founder of creative catering outfit Pickle Shack, has rubbed shoulders and sharpened his knives with some of the UKs most successfull and celebrated chefs. These protégés include Michael Caines, Daniel Clifford and John Campbell, each with 2 Michelin stars to their name. Not to mention a great big handful of very talented and skillfull, local and international chefs that Josh has had the fortune to work with. Pickle Shack is about celebrating local produce, lovingly prepped and great to feast on!
On 7th May its latest event was no exception, with an intimate group of 28 guests to sample a sumptuous three course feast, curated and delivered by Josh McDonald-Johnson and his creative food company Pickle Shack.
Hosted in the Diamond Room, guests were welcomed to an intimate supper with each course personally introduced by chef Josh to explain the provenance of the local ingredients used in the dishes. Priding themselves on local, sustainable and ethically sourced produce, provenance is fundamental to Pickle Shack’s philosophy.
Huntsham Court’s dinner guests feasted on pressed pheasant to start, followed by beef bavette shin hot pot with carrot puree, chervil crumb, carrot emulsion and crispy sea kale. To round off the gourmet journey, a woodruff pannaccotta with bitter chocolate cremeux, red currants and strawberries revived and introduced an English herb long forgotten by many offering warm flavours of almonds fused with sweet hay.
Indulging long in to the evening, guests were treated to digestifs and piano music from concert pianist Giles Adams – with memories to keep, shot by the venue’s partnered photographer Mark Gawthorne www.evolvephoto.co.uk. Owner of Pickle Shack, Josh McDonald-Johnson, comments: “It was a real pleasure to cook with magnificent Devon produce within what can only be described as the magical surrounds of Huntsham Court. That’s what I love about the ‘pop-up’ philosophy – we can indulge diners with really creative food within really interesting venues”

Pickle Shack – Produce Promise in their words….
Tis’ quite the feat to solely use local, sustainable and ethically sourced produce when you are catering for the masses, and nobody ever said it was easy. But there is no doubt it is worth the effort.
Here at Pickle Shack we aim to source 80% of our ingredients from within a 10 mile radius of us, which is pretty darn good. We are proud of our efforts and so are our local farmers and suppliers.
The other 20% goes to a few store-cupboard basics that can’t be sourced locally: Chocolate, coffee, spices and the odd lemon are the main culprits. It is important to us that, even though these items are from further afield, they must come from ethical and sustainable roots.
So here’s our produce promise… We will continue to use as much as we possibly can from our local suppliers of rural Devon. This includes meat, fish, vegetables, fruits and amazing ingredients that can be foraged wild from our hedgerows and fields. As for the goods that can’t be sourced locally, we promise to source them ethically and responsibly.
Pickle Shack – About Josh the man in his words….
Pickle Shack is a very new company and we are excited to see it grow, but don’t worry, we’ve been doing this sort of thing since forever, at least it feels that way.
Being headed up by Josh McDonald-Johnson means Pickle Shack has a wealth of valuable and essential experience behind it.
Josh has rubbed shoulders and sharpened his knives with some of the UKs most successfull and celebrated chefs. These protégés include Michael Caines, Daniel Clifford and John Campbell, each with 2 Michelin stars to their name. Not to mention a great big handful of very talented and skillfull, local and international chefs that Josh has had the fortune to work with.
Starting his career learning the fundamentals of classic French cookery with Michael Caines, coupled with time in a Devon smokehouse gives Josh’s cooking a strong backbone of tradition and flavour.
However, working with more modern preparations such as ‘molecular gastronomy’ and sous vide throughout his career makes Josh a unique and creative chef with an appetite for innovation.
Having traveled extensively through Asia, North America, Australasia and Europe Josh has lots of different influences in his evergrowing repertoire.
Running kitchens and events both here in the UK and across the world at some very fine restaurants, Josh has gained a lot of experience and has a few tricks up his sleeve.
With a passion for cooking a dish that you won’t find anywhere else and a penchant for using the best, responsibly sourced ingredients, Pickle Shack is open for business.
