The kitchen is headed up by Head Chef/Owner Mark, whose 30 years’ experience includes working in top restaurants including Gordon Ramsey at Claridges, Michelin recommended Domaine Gayda in the French Languedoc and the Royal Academy of Arts in London. He has previously worked in France, Spain, Australia and Switzerland and has cooked for many top-end clients, including royalty. He is classically trained but enjoys putting modern twists on dishes and experimenting with new flavours. On his odd day off Mark enjoys playing cricket or basketball with the kids and keeping the garden looking lovely (apparently mowing relaxes him!).
Mark is joined in the kitchen by Mark (2!) – both chefs are excited about the pop-up – they have plans to combine favourite dishes with new ideas, using the very best locally sourced seasonal produce Devon has to offer.
