Not only did we excitingly open our doors as a Pop-Up Hotel in October, we also teamed up with the fabulous Milkshed Catering. Running the the Kitchen and Restaurant, they have been taking care of all areas of dining at The Hutsham Court Pop-Up Hotel. This creative team are a popular catering supplier that we see regularly here at Huntsham Court for events and weddings.
To give some insight to the new and exciting Pop-Up hotel, Katie from Milkshed has shared some of her experience’s so far:
A bit about Milkshed and the team…
We are usually found creating fabulous wedding feasts – when Covid put a stop to weddings, we were delighted to be asked by Huntsham to collaborate on their pop-up.
Chef/owner Mark has been cooking for 30 years. His food is as straight as his Aussie nature – simply put ‘good food, done right’ – excellent local ingredients, cooked to perfection and beautifully presented. Fellow owner Katie loves welcoming diners – you’ll be assured of attentive service, a warm smile (under the mask!) and a real passion for food. Mark and Katie are supported by a small but carefully selected team.
Dining with us and what to expect…
The two dining areas are warm, intimate and cosy spaces. Perfect for dining as a couple or in a small group! Tables are spaced well apart. You will get to enjoy a three-course menu with three choices per course. This is changed regularly and reflects the seasonal produce available at the time.
For a special treat book in for the Chef’s tasting menu – seven smaller courses of the Chef’s favourites, packed full of flavour and deliciousness (available on Thursdays and Saturdays).
A sneak-peak at the December menu…
The December menu is still in progress at the moment. However, you can expect warming classics with nods to Christmas rather than an all-out turkey dinner with stuffing balls!

Overall feedback so far…
Feedback has been great! After Dining at The Huntsham Court Pop-Up Hotel, the Hotel and Restaurant received a review from Devon Life. ‘there was a specialness about the food which more than matched the surroundings’ and we’ve had some wonderful comments from diners.
It has been particularly special to welcome past wedding couples celebrating anniversaries or reliving their wedding memories. With Huntsham not usually open to the public this is a unique and exclusive opportunity to see behind the closed doors.
